This exquisite sake is brewed exclusively from "Fukunoka", a premium sake rice variety indigenous to the pristine natural environment of Fukushima Prefecture. Every grain used is cultivated within the city of Fukushima, ensuring complete local authenticity. The brewing water is sourced from the subterranean streams of the Azuma Mountain Range—renowned for having the purest water in Japan for 14 consecutive years.
For the blend, we use a five-year aged Junmai Daiginjo, matured in our historic brewery. Brewed to the highest standards, rivaling the finest Junmai Daiginjo, this sake also incorporates a pioneering yeast developed by Professor Fujii of the Faculty of Food and Agriculture at Fukushima University. This innovative yeast preserves the delicate fruity ginjo aroma that typically fades during aging, delivering a rare harmony of freshness and depth.
Aging Method
Following traditional snow-aging techniques at the foot of Mount Azuma, the sake is stored at sub-zero temperatures—mirroring the natural chill of snow—inside specially controlled containers. This ice-temperature maturation process allows the refined ginjo bouquet to intertwine seamlessly with the mellow, rounded flavors developed through aging, achieving an extraordinary balance of elegance and complexity.
